Identificarea tehnicilor de detectare a prezenței histaminei în produsele alimentare

Abstract

Histamina este prezentă într-o gamă largă de alimente consumate zilnic. Fiecare dintre acestea conține o anumită cantitate de histamină. Odată ce este depăşită limita admisibilă, în organism apar simptome ce duc la intoleranță și care provoacă probleme de sănătate. Astfel, histamina este asociată cu intoleranța alimentară și toxiinfecția alimentară. Prevenirea, detectarea și depășirea problemelor de siguranță alimentară cauzate de acumularea de histamină în produsele alimentare este un subiect sensibil pe plan internaţional precum şi naţional. Scopul tezei de master este identificarea şi descrierea metodelor de detectare a histaminei în produse alimentare.

Histamine is present in a wide range of foods consumed daily. Each of these contains a certain amount of histamine. Once the permissible limit is exceeded, symptoms appear in the body that lead to intolerance and cause health problems. Thus, histamine is associated with food intolerance and food poisoning. The prevention, detection and overcoming of food safety problems caused by the accumulation of histamine in food products is a sensitive topic on an international as well as a national level. The aim of the master's thesis is to identify and describe the methods of detecting histamine in food products.
