dc.description.abstract This paper presents the evaluation, based on bibliographic and experimental study of the nutritional value of meat and liver of bovines/porcinis. Was studied the chemical composition and nutritional value of raw materials. Nutrition index (VN10), chemical score (CS) and the energy value was calculated. The paper presents Pearson linear correlation of these indices. It was found that bovine and porcine liver are interesting in terms of nutrition, economics, serving as raw material for food diversification with improved nutritional value. en_US
dc.description.abstract În această lucrare se prezintă evaluarea, în baza studiului bibliografic şi experimental, a valorii nutritive a cărnii şi ficatului de bovină/porcină. S-au studiat compoziţia chimică a materiilor prime şi valoarea nutritivă. S-a calculat indicele valorii nutritive (VN10), indicele chimic (CS), valoarea energetică. În lucrare se prezintă corelaţia liniară şi Pearson a acestor indici. Sa constatat că ficatul de bovină şi porcină prezintă interes din punct de vedere nutriţional, economic, servind drept materie primă pentru diversificarea alimentelor cu o valoare nutritivă ameliorată. ro
dc.description.abstract Ce papier, basée sur l’étude bibliographique et expérimentale, présente l’évaluation de la valeur nutritionnelle de la viande et du foie de bovine/porcine. La composition chimique de la matière première et la valeur nutritionnelle a été étudié. On a estimé l’indice de la valeur nutritionnelle, l’indice chimique (CS) et la valeur énergétique. Dans ce travail est présenté la corrélation linéaire et Pearson de ces indices. On a constaté que le foie de bovine et porcine présentent d’intérêt en termes de nutrition et économie, servant comme matière première pour la diversification des aliments avec une valeur nutritionnelle améliorée fr
dc.description.abstract В данной работе представлена оценка пищевой ценности говяжьего/свиного мяса и печени на основе литературной и экспериментальной работы. Была изучен химический состав и пищевая ценность сырья. Рассчитали значение пищевой ценности (VN10), химический показатель белков (CS), энергетическая ценность. В работе была представлена линейная и Pearson корреляция этих показателей. Было установлено, что говяжья и свиная печень представляет интерес с пищевой и экономической точки зрения, служит сырьём для диверсификации продуктов питания с улучшенной пищевой ценностью. ru
