dc.description.abstract În lucrarea dată am studiat evoluţia complexului polifenolic al vinului roşu Merlot la menţinerea lui pe chips-uri de stejar de origine franceză, americană şi română. Am constatat că utilizarea chips-urilor româneşti şi a celor franceze permite de a stabiliza cel mai bine substanţele colorante, iar folosirea chips-urilor americane intensifică aroma. en_US
dc.description.abstract In the present work we studied the evolution of polyphenolic compound of Merlot red wine in addition of French, American and Romanian oak chips. We found that Romanian and French chips use allow to stabilize the best dyes, but American chips use enhances flavour. en
dc.description.abstract Dans le présent travail nous avons étudié l’évolution du complexe polyphénolique du vin rouge Merlot, maintenu sur des copeaux de chêne d’origine française, américaine et roumaine. Nous avons constaté que l’utilisation des copeaux roumains et français permet une meilleure stabilisation des colorants, mais l’utilisation des copeaux de chêne américains intensifient l’arôme. fr
