Fibrele comestibile din unele deşeuri agroalimentare

Abstract

Scopul tezei: Obținerea fibrelor comestibile din deșeuri agroalimentare, material primă servind semințele de in și șrotul obținut din ele. Obiectivele lucrării: Evaluarea principalilor indicatori fizico-chimici, ai fibrelor alimentare. Utilizarea inului pentru extragerea de ulei, și obținerea fibrelor comestibile din șotul rămas în urma extracției, prelucrarea matematico-statistică a datelor experimentale, elaborarea planului HACCP și identificarea riscurilor caracteristice procesului de fabricare a fibrei alimentare.

The purpose of work: Obtaining edible fibers from agri-food waste, raw material serving flax seeds and grind obtained from them. Objectives: Evaluation of the main physico-chemical indicators of dietary fiber. The use of flax for oil extraction, and obtaining edible fibers from the shot left after extraction, the mathematical-statistical processing of experimental data, the elaboration of the HACCP plan and the identification of the risks characteristic of the food fiber manufacturing process.
