Abstract

Scopul tezei de master: este studierea și determinarea calității şi siguranţei produselor zaharoase de tip zefir. Obiectivele lucrării: Studierea conceptului unui produs de tip zefir, selectarea materiilor prime pentru elaborarea produse funcționale de tip zefir, studierea procesul de fabricare a zefirului, selectarea și alegera metodelor de testare a produselor elaborate, determinarea proprietăților organoleptice și fizico chimice – indicatori de calitate a zefrulu, argumentarea calității și siguranței produselor elaborate.

The purpose of the master’s thesis: the study and determinination of the quality and safety of marshmallow-type sugar products. Objectives of the paper: Study of the concept of a marshmallow-type product, selection of raw materials for the development of functional marshmallow-type products, study of the marshmallow manufacturing process, selection and choice of testing methods of developed products, determination of organoleptic and physico-chemical properties - quality indicators of the marshmallow, arguing the quality and safety of manufactured products.
