Abstract

Îngheţata este unul dintre cele mai căutate produse în sezonul cald, iar piaţa de producere și desfacere în Republica Moldova a acestui delicios desert este în permanentă dezvoltare şi creştere. Una din direcțiile prioritare este folosirea fibrelor în fabricarea înghețatei. Folosirea fibrelor mărește valoarea lor nutritivă, îmbunătățește textura, prelungește durata de depozitare a înghețatei și poate înlocui între 25% și 50% din grăsime.
