dc.description.abstract The paper highlights the development of electrode – biosensor modified by the tyrosine (or enzyme polyphenol oxydase), used for identification of phenol compounds. We chose as example the dosage of the phenol due of its toxicity and its varied fields of application (pesticides, disinfectants, environmental, smoked products, etc.). The quantitative determination of the concentration of phenol compounds is essential to maintaining organoleptic quality, the significant amount of smoked foods and appropriate food quality compliance. en
