Abstract:
Due to the nutritional value, the taste qualities and the quantity in which it is sought and consumed, there is an important share in the world given to foods with a high protein content. Scientific nutrition, under the conditions of a modern civilization, gives meat and meat products a special role in the daily ration structure. In addition to animal proteins, plant proteins play a significant role in human nutrition, especially in developing countries, where average protein intake is lower than the necessary norm. The ultimate success of the use of plant proteins as a feed depends to a large extent on the individual characteristics that it confers on the food, as oilseeds groats are important sources of lipids and proteins. This paper reflects the main aspects of rational use of agro-industrial waste, namely the rational use of mutton meat to production of semi-products and the use of waste from the oil industry - oilseeds groats (35-50% crude protein) in the food industry.
