Abstract

Основная цель данной работы заключалась в углубленном изучении физико-химических свойств зерновой культуры амарант (Amaránthus L.) и разработка технологии получения функциональных продуктов питания на его основе. В задачи работы входило изучение роли амаранта на мировом рынке и в пищевой индустрии, определение перспективы культивирования амаранта в Республике Молдова, получение функционального продукта на основе амаранта, определение физико-химических и органолептических свойств полученного продукта, разработка технологических рекомендаций по применению функционального продукта на основе амаранта.

Scopul principal al acestei lucrări a fost studiul aprofundat al proprietăților fizico-chimice ale culturii de cereale amarant (Amaránthus L.) și dezvoltarea tehnologiei de obținere a produselor alimentare funcționale pe baza acestuia. Sarcinile lucrării au inclus studierea rolului amarantului pe piața mondială și în industria alimentară, determinarea perspectivelor de cultivare a amarantului în Republica Moldova, obținerea unui produs funcțional pe bază de amarant, determinarea proprietăților fizico-chimice și organoleptice ale produsului rezultat. produs, elaborând recomandări tehnologice pentru utilizarea unui produs funcțional pe bază de amarant.

The main goal of this work was in-depth study of the physicochemical properties of the grain crop amaranth (Amaránthus L.) and the development of a technology for obtaining functional food products based on it. The tasks of the work included studying the role of amaranth on the world market and in the food industry, determining the prospects for cultivating amaranth in the Republic of Moldova, obtaining a functional product based on amaranth, determining the physicochemical and organoleptic properties of the resulting product, developing technological recommendations for the use of a functional product based on amaranth.
