Perspectivele tehnicii și tehnologiei în producerea produselor din carne

Abstract

Scopul lucrării: cercetarea perspectivelor de dezvoltare a tehnicii și tehnologiei în producerea produselor din carne.

Obiectivele lucrării:

Studierea istoriei de dezvoltare a domeniului de prelucrare a produselor din carne în RM;

Cercetarea direcțiilor de dezvoltare moderne de procesare din Industria Alimentară;

Cercetarea metodelor moderne de conservare a produselor din carne;

Cercetarea tehnologiilor moderne de fabricare a preparatelor din carne;

Cercetarea liniei tehnologice pentru fabricarea preparatelor de carne;

Cercetarea soluțiilor inovative în prelucrarea preparatelor din carne;

Cercetarea și compararea nivelului tehnic actual de dezvoltare al mașinilor utilizate în domeniul PPC.

Structura tezei: Teza de master este scrisă și imprimată pe suport de hîrtie cu formatul A4 pe 70 de pagini cu fontul TNR, 12, Justify, spațiu între rînduri de 1,5 conform ghidului de elaborare și redactare. Teza conține 2 tabele, 44 de imagini și 46 de surse bibliografice. Teza este alcătuită din 2 capitole: Studiul teoretic și Studiul practic. În primul capitol s-a studiat și cercetat: istoria de dezvoltare a domeniului de prelucrare a produselor din carne în RM; direcțiile de dezvoltare moderne de procesare din industria alimentară; cercetarea metodelor moderne de conservare a produselor din carne; tehnologiile moderne de fabricare a unor preparate din carne; cercetarea liniei tehnologice pentru fabricarea preparatelor de carne în flux continuu și cercetarea soluțiilor inovative în prelucrarea preparatelor din carne; în capitolul 2 s-a cercetat și comparat nivelul tehnic actual de dezvoltare al mașinilor utilizate în domeniul PPC; și s-a descris contribuția proprie în modernizarea unor utilaje din sectorul PPC; spre final s-au elaborat unele măsuri de protecţie şi igienă a muncii. Teza s-e finisează cu formarea concluziilor și prezentarea bibliografiei.

The purpose of the work: researching the prospects for the development of technique and technology in the production of meat products.

Objectives of the work:

Studying the development history of the field of processing meat products in the Republic of Moldova;

Researching the modern development directions of processing in the Food Industry;

Researching modern methods of preservation of meat products;

Researching modern technologies for the manufacture of meat preparations;

Research of the technological line for the manufacture of meat preparations;

Researching innovative solutions in the processing of meat preparations;

Research and comparison of the current technical level of development of machines used in the field of PPC.

Thesis structure: The master's thesis is written and printed on A4 format paper on 70 pages with TNR, 12, Justify font, 1.5 line spacing according to the drafting and drafting guide. The thesis contains 2 tables, 44 images and 46 bibliographic sources.

The thesis consists of 2 chapters: the theoretical study and the practical study. In the first chapter, the following was studied and researched: the development history of the field of processing meat products in the Republic of Moldova; modern development directions of processing in the food industry; researching modern methods of preservation of meat products; modern technologies for the manufacture of some meat preparations; technological line research for the manufacture of meat preparations in continuous flow and the research of innovative solutions in the processing of meat preparations; in chapter 2 the current technical level of development of the machines used in the field of PPC was researched and compared; and described himself own contribution in the modernization of some machinery in the PPC sector; towards the end, some protection and work hygiene measures were developed. The thesis ends with the formation of conclusions and the presentation of the bibliography.
