Abstract:
Consumption of healthy foods is becoming more popular and necessary in society. In the food industry there is a need for natural sources of acidity. Apple acidifier is a 100% natural product. It has a significant content of native organic acids and other valuable substances. It can be used in preserving fruits and vegetables, substituting the acids in the recipe. Vegetables preserved with acetic acid have a pungent sour taste, while those preserved with apple acidifier have a sweet-sour, soft and pleasant taste. The paper presents the results of research in laboratory conditions of the use of acidifier in unripe apples. The technological scheme for the production of pickled tomatoes was preserved with apple acidifier and the recipe for their manufacture were developed.
