Abstract:
The article presents the basic parameters system of milk quality and their influence on the competitiveness of the dairy industry. We have classified the reasons of manufacturing poorquality dairy raw material and their influence on processing and quality of dairy products. We have suggested an additive multiplicative model of the analysis of milk quality influence on the average price change of realization and on the sum of the proceeds received by the agricultural enterprises. It was established that as a result of rating milk improvement increases not only the average price of its realization, but also the total sum of proceeds
