Abstract:
Raising goats is becoming more and more interesting for many farmers. Milk and especially goat cheese are in demand on the market and ensure the sale of production at attractive prices. This paper is of scientific interest due to the fact that the manufactured product itself is a product requested by consumers of all ages and knowing the particularities of manufacturing we will be able to prove the quality of the finished product obtained - goat cheese. Therefore, goat's milk obtained from goats of local population in the central area of the Republic of Moldova can serve as a raw material for the manufacture of goat cheese, respecting all the particularities of production. The cheese obtained corresponds to the requirements in force and is much appreciated by consumers.
