Abstract:
Electrophysical processing of whey allows for the fractionation of whey in two major fractions: protein-mineral concentrate and deproteinised whey. Electrophysical processing of the sweet whey obtained requires the addition of colloidal phase dispersion and the enrichment of whey with load carriers, especially with minerals (bivalent ions), which have two functions: increased serum protein extraction and protein-mineral concentrate formation; reducing energy consumption.
