dc.description.abstract | The objectives of this work are researches for obtaining iodized oil that would satisfy the requirements of body in iodine. The sunflower seed oil is a product with the most important value, thus the production of oil fortified with iodine would be a cheap and accessible variant. Production of oil fortified with iodine constitutes a considerable iodine supplement, which, associated to iodine contribution from kitchen salt, would contribute to the eradication of deficiency in iodine. | en_US |
dc.description.abstract | Folosirea uleiurilor iodurate în alimentaţie prezintă un interes deosebit în cazurile, când sarea iodurată nu este utilizată în cantităţi suficiente sau când iodurarea apei aste dificilă. Această metodă constituie un mijloc eficient pentru a spori aportul zilnic în iod pentru anumite categorii ale populaţiei în scopul prevenirii cretinismului şi eradicării maladiilor iododeficitare. Prezentul studiu prezintă evoluţia proprietăţilor fizico-chimice şi a indicilor de calitate a uleiului de floarea soarelui iodurat. | ro |
dc.description.abstract | L’utilisation de l’huile de tournesol iodée comme additif représente l’une des méthodes acceptables qui n’est pas coûteuse. En plus, l’iode est un élément liposoluble, ce qui pourrait faciliter son incorporation dans l’huile et augmenter sa stabilité. Une petite quantité de l’huile iodée (0,25 – 1,0% par rapport à 100% du produit) incorporée dans des produits n’affecte pas les indices organoleptiques et physico-chimiques des aliments enrichis. L’utilisation de tels produits dans l’alimentation en combinaison avec du sel iodé pourrait prévenir le déficit d’iode. | fr |
