Asigurarea calităţii produselor de panificaţie congelate la S.A. „Franzeluţa”

Abstract

În lucrarea dată s-au studiat aspectele generale ale procesului de congelare aplicat în industria panificației, importanța utilizării frigului în tehnologia de fabricare, modificările senzoriale, fizico-chimice, microbiologice ce au loc după decongelarea pâinii și implementarea principiile HACCP pentru produsul cercetat.

In this paper we studied the general aspects of the freezing process applied in the bakery industry, the importance of using cold in the manufacturing technology, the sensory, physico-chemical, microbiological changes that take place after the thawing of the bread and the implementation of the HACCP principles for the researched product.
