Abstract

Scopul tezei: cercetarea nivelului tehnic al întreprinderilor de uscare a fructelor și legumelor din Republica Moldova.Studiul materiei prime presupusă deshidratării, norme de consum la fabricarea fructelor uscate, diagrama procesului de producere, prune uscate, descrierea operaţiilor tehnologice la uscarea prunelor, mere uscate, descrierea operaţiilor tehnologice la uscarea merelor, utilaje și echipamente folosite la uscare, cercetarea ofertei de vânzare a deshidratoarelor, analiza întreprinderilor de uscare a fructelor și legumelor din Republica Moldova, analiza de dezvoltare tehnică a întreprinderilor de uscare a fructelor și legumelor din RM, perspectivele de dezvoltare a tehnicii și tehnologii de uscare a fructelor și legumelor, noțiuni teoretice, clasificări ale metodelor și utilajelor de uscare, perspectivele dezvoltării tehnicii de uscare ecologice.

The purpose of the thesis is to research the technical level of fruit and vegetable drying enterprises in the Republic of Moldova.Study of the raw material presumed for dehydration, consumption norms in the manufacture of dried fruits, diagram of the production process, prunes, description of technological operations for drying plums, dried apples, description of technological operations for drying apples, machinery and equipment used for drying, research of the sale offer of dehydrators, analysis of fruit and vegetable drying enterprises in the Republic of Moldova, analysis of technical development of fruit and vegetable drying enterprises in the Republic of Moldova, perspectives for the development of fruit and vegetable drying technique and technologies, theoretical notions, classifications of methods and drying equipment, the prospects for the development of environmentally friendly drying technology.
