Abstract

The advantages of the elaborated process consist in the use of industrial products, obtained in enormous quantities following the brewing process, the reduction of the autolysis time, the reduction of the temperature to avoid protein denaturation and the activity of antioxidant enzymes, the reduction of the ethyl alcohol used and the elaboration of natural preparations with practical implementation in various branches of the country's economy, especially in the livestock sector.
